Pumpkin Cinnamon Rolls

Posted by on Oct 14, 2016 in Blog Posts, Recipes

So I decided to try to make something pumpkin every week this month.  I LOVE cinnamon rolls.  So does my family.  We try to make them on Sundays at least once a month.  So this month…We made them pumpkin style.  I had a few hiccups and tweaked this recipe to make it a little bit more southern and NOT healthy at all.  LOL.  Balance is good and Cinnamon rolls are not meant to be made healthy.  So here is my spin on a pumpkin cinnamon roll.         One tip is to make sure you roll the dough up tight and Seal it.  Ours fell apart the...

Pumpkin, Bean & Chicken Enchiladas

Posted by on Oct 6, 2016 in Blog Posts, Recipes

Pumpkin is not what I think of when I think Enchiladas.  And to be completely honest… I turned my nose up at the idea when I first read the recipe.  My gut said… Clean it up and try something new.  Boy am I glad I did because these were absolutely amazing.  I made a large batch and invited friends over for dinner.  I didn’t tell them what was in the recipe until they approved of the dish.  LOL.  They loved it and asked for the recipe themselves.  So This month… Each week, I will be sharing a different pumpkin recipe that we made to keep things interesting.  It is...

Paid In Full! We paid off Val’s M3 in 1.5 Years

Posted by on Jul 11, 2016 in Blog Posts

A year and a half ago I surprised my husband for Christmas with a newer version of his dream car, a custom designed brand new 2015 BMW M3. Buying him a new car and paying cash was something that I had set on my vision board after we paid off our 20K in debt. I wanted our family to be more financially sound and debt free. More importantly…I wanted Val to OWN his car. The dealership convinced me that it would improve my credit score even more, after bankruptcy and having 7 years of being 100% financially dependent as a stay at home mom with 0 credit, to take...

You-Better-Work. Work-Work-it-girl. Are you singing it? Your welcome. But seriously, “If you are feeling over whelmed, or thinking you don’t have time to do certain things, think again. You can eliminate more things out of your day than you realize. Listen to an Audio book or work during your commute, wake up an hour earlier, slice your time on Facebook in half. Instead of surfing the web during your lunch hour use that time to dream up new ideas and research a new project. Give up Netflix for a night. We all have the same hours in a day. Its about how you choose to spend them that counts...

Cauliflower Fried Rice

Posted by on May 26, 2016 in Blog Posts, Recipes

My husband and I LOVE fried rice.  My kids love it too.  BUT, with my recent stomach issues with grains, I have been trying new recipes and ideas.  I found a recipe for cauliflower rice and put my own spin on it.  Best part is that it is ALL VEGGIES.  We added some shrimp in for protein.  You could personalize this recipe in so many ways to suit your family but my family loved it just like this.  I hope you enjoy it as much as we did!  I doubled the recipe so that we would have leftovers.  This is Enough to feed maybe 2 adults.  It makes...

Anytime Socca Vegan Gluten & Dairy Free Pizza

Posted by on May 4, 2016 in Blog Posts, Recipes

Looks Delish, right? Well it was!!! Don’t mind the burnt edges.  Someone, meaning me, left in on the top rack for a tad too long.   So here’s the thing.  I am not a Vegan BUT I have not had dairy, grains, meat, or Gluten of any kind for the past 3 weeks.  I just completed the Ultimate Reset Detox/Cleanse on Monday.  This was Tuesday.  The kids said “WE WANT PIZZA”.   Of course I immediate response was SURE! Then I started to panic thinking about how uncomfortable my stomach would be.  How much pain I would be in if I just up and ate pizza when...
