Butternut Squash Beef Stew




This was amazing.   Butternut Squash Beef Stew.  It’s super easy to make and is a favorite in my house.  I was put off by the initial look of it because I am not a stew person.  I forced my self to try it and Oh My GOODNESS!!! Talk about YUMMY!!!  Delish! It is part of the 21 Day Fix Extreme Meal plan and it is completely clean. The meat is lean and its full of veggies.  You won’t be disappointed.  It makes for great leftovers so lunch the next day is already set.



What you Need:

1 tsp. olive oil

1 1/2 lbs. raw boneless lean beef stew meat, cubed

1 medium onion, chopped

1/2 green bell pepper, chopped

1/2 red bell pepper, chopped

4 cloves  garlic, crushed or minced

2 medium tomatoes, chopped

1 cup low-sodium organic beef broth

1 bay leaf

1 tsp. himalayan salt

1 tsp. ground black pepper

2 cups butternut squash, cubed

1/4 cup fresh parsley, chopped



What to Do:

Heat oil in a large saucepan over medium heat. Add beef and cook 4-5 minutes or until browned.  Add onion, peppers and garlic and cook for about a minute. Add tomatoes, broth, bay leaf, salt and pepper.  Bring it to a boil and then reduce the heat to medium-low.  Cover and cook for about 40 minutes.  Add Squash and mix it all together.  Cook for about 8-10 minutes or until the beef is fork tender. Remove bay leaf and top with parsley.
