Cauliflower Fried Rice

My husband and I LOVE fried rice.  My kids love it too.  BUT, with my recent stomach issues with grains, I have been trying new recipes and ideas.  I found a recipe for cauliflower rice and put my own spin on it.  Best part is that it is ALL VEGGIES.  We added some shrimp in for protein.  You could personalize this recipe in so many ways to suit your family but my family loved it just like this.  I hope you enjoy it as much as we did!  I doubled the recipe so that we would have leftovers.  This is Enough to feed maybe 2 adults.  It makes about 4 cups of fried rice.

 

What you need:

1 tbsp Coconut Oil
2 Free Range Eggs, whisked
2 tsp Sesame Oil
3 Garlic Cloves, crushed
1 Long Red Chili, de-seeded and finely diced
1 small Carrot, finely diced (or 1 cup Julienned Carrots)
1 cup Frozen Edamame Peas, defrosted (or 3/4 cup peas)
6 Baby Corn Spears, chopped (or 1 cup corn kernels)
1 small head Broccoli, cut into small florets
2 cups Diced Cauliflower, made into Rice (you can buy it pre riced in the veggie section)
1-2 tbsp Braggs liquid aminos (or Coconut Aminos)
4 Spring Onions, finely sliced
1 tbsp Coriander Spice
20 shrimp, cooked and peeled (optional)

 

 

What to Do:

 

Sauté’ Shrimp in oil until cooked through and set aside. (Optional). In a large, deep frying pan
heat 1 teaspoon of coconut oil. Pour eggs into pan and move around so that egg mixture spreads
evenly and thinly over the base of the pan. Cook over medium-low heat until cooked through.
Remove from pan and transfer to a cutting board. Once cool enough roll up crepe and finely
chop it up. You can stick it in a bowl and just chop it up with scissors to. LOL. It is easier. Set
them aside. In the same frying pan heat sesame oil and remaining coconut oil. Add garlic
and red cilli pepper and sauté for 1- 2 minutes over medium heat. Add broccoli, carrot and corn
and stir occasionally until all vegetables are tender. (Add a splash of water to help broccoli cook
if needed). Add in peas and stir occasionally for 1-2 minutes.  Add in Cauliflower Rice until
cooked through and softened. Add Braggs Liquid Aminos (optional) egg and green onions.
Cook for about 2-3 minutes. Add in coriander and shrimp (optional). Adjust seasoning to taste.
Sprinkle sesame seeds just before serving if you like.

 

****To make your own cauliflower rice by by grating 1 head of raw cauliflower.
