As you all know I am doing the Ultimate reset right now and I LOVE it. I love how it makes me feel and how it flattens out my stomach, gives me energy, clears up my skin and my cottage cheese on my tush, LOL. Anyway, In week 2 you cut out dairy and animal proteins. This is one of the recipes that I found and LOVED!! It was really good warm and my kids loved it too. Very sweet but with natural sugars. It is Gluten Free and Vegan. I hope that you enjoy it! What you need:
(makes 1 serving)
3/4 cup cooked Quinoa, warmed
2 Tbsp. canned coconut milk (BPA free can ORGANIC)
1 tsp. pure maple syrup (grade B)
1/4 cup fresh pineapple chucks
1 Tbsp chopped raw walnuts
What to Do:
Combine the Quinoa, Coconut Milk, and Maple Syrup. Mix well. Place in serving dish and top with Pineapple and Walnuts.
