DELICIOUS Breakfast Frittata Waffle. It’s an unconventional spin on a waffle. We don’t like to use flour products in our house and this was a great, healthy way to get in a little extra protein and veggies for breakfast. The kids loved it! This recipe made 4 waffles for us this am.
2 eggs whisked 1/2 cooked diced sweet potato 1 cup torn fresh baby spinach 1/2 clove garlic minced 1 tbsp goat cheese (or feta)
Whisk all the ingredients together. And pour it into a waffle maker. Top it with a little extra cheese and hot sauce if you would like.
