SUPER SIMPLE SPICY CHICKPEA SALAD
1. In a large pot, saute onions and garlic in oil over medium heat for 5 minutes.
2. Add all remaining ingredients except parsley, reduce heat to medium-low, cover, and cook for 15 minutes. Stir occasionally to prevent burning.
3. Remove from heat and add parsley. Serve hot or cold.
