Turkey Lettuce Wraps



 

OH MY GOODNESS!!! I LOVE MEXICAN FOOD.  I thought I was going to have to give up my taco tuesdays to stay on target with the EXTREME workout program.  Well I do not!!! I have these amazing turkey lettuce wraps that are totally 21 Day Fix Extreme Friendly and I made a HUGE batch of the turkey meat so that I could have it as a pre prepped lunch.  All I have to do is heat up the turkey meat and then break off the lettuce leaves.  It is so relish and full of flavor.  The whole family had them and they just added some extra goodies like sour cream, avocado and cheese.  This will certainly stay in the rotation.  You could even add in some Quinoa and black beans if you wanted to spice it up a little more. Oh my..the ideas of what else I can do with these are spiraling as I write this.  Anyway, here you go!!!

What you need: 

 

1 1/2 lbs. Lean Ground Turkey

1/2 medium onion, chopped

1/2 green bell pepper, chopped

1 medium tomato, chopped

1/2 cup chopped fresh cilantro

6  baby sweet lettuce leaves (cups), washed, dried

1 tsp garlic powder

1 tsp cumin

1/2 tsp himalayan salt

1 tsp chili powder

1 tsp paprika

1/2 tsp dried oregano

3/4 cup water

3/4 cup tomato sauce, (no sugar or salt added)

 

 

What You Do:

 

Heat large skillet over medium heat and add turkey.  Cook until no longer pink.  Stir occasionally.  Add spices and mix well.  Add onion and peppers and cook for about 4-5 minutes. Add water and tomato sauce and bring it to a boil.  Reduce heat and cover.  Cook on low for about 5-10 minutes.  Top each lettuce leaf with about 1-2 tbsp of the meat mixture.  Then add the tomato and cilantro on top of the meat mixture.  If you are using any other toppings like cheese or avocado add those and serve.
