I like to make things up as I go. LOL. Here is one I came up with. So good and good for you! Love the colors!
What you need:
1 lb grass fed bison
2 cloves garlic
4 bell peppers
1 cup brown rice
2 cups tomato purée (homemade)
Italian seasoning, garlic powder, basil, Himalayan salt, pepper, turmeric.
What to do:
Preheat oven to 400. Cook rice according to package
Cut tops off peppers and bake for 10 minutes. Sautée onions and garlic, add bison salt and pepper and cook through. Combine tomato purée and spices in seperate bowl. Add rice sauce to bison leaving a little sauce to top with later. Scoop bison mixture into peppers and cook for another 10 minutes or until peppers are soft. Remove from oven plate and serve. Top with remaining sauce.
