BLACK BEAN & SWEET POTATO ENCHILADAS!!
Delicious!! I have to admit I was a little nervous trying this out. They turned out Amazing!!! So good!! And to make it even better we swapped the tortillas for Zucchini
What you Need:
Filling:
1 tsp oil
1/2 yellow onion, chopped
1 clove garlic, minced
1 1/2 c sweet potato cubed
1 (15 oz.) can black beans, drained and rinsed
1/2 tsp ground cumin
1/2 tsp Himalayan salt
For the sauce:
1 1/2 c strained tomatoes
1/2 c water
1 clove garlic
1/4 yellow onion
2 tsp chili powder
1 tsp ground cumin
1/2 tsp himalayan salt
