These may just be my FAVORITE protein pancake recipe I have made to date. They are so delicious and the ingredients are interchangeable to change the flavor. Meaning Substitute the blueberries for cut strawberries or peaches. So yummy. I think adding a little bacon to this would also be AMAZING!!! When I first saw this recipe I was hesitant to try it out because I despise cottage cheese. Everything about it grosses me out. I promise that you will not taste it at all. These are sweet and have a little crunch to them because of the almonds. My children LOVE them so I am winning. We buy the EXTRA LARGE Vital farms egg flats from Costco because we go through SO many eggs in this house. I hope you enjoy them. They fit perfectly into a meal plan for a lifting program and I would eat these when training for a fitness competition. DELISH!
Blueberry Almond Pancakes
Serves 2-3
WHAT YOU NEED
1 Cup Old Fashioned Oatmeal (I grind my own into flour in the blender)
1/2 cup Cottage Cheese (or ricotta)
1/2 cup Blueberries, fresh
2 TBSP Almond Slivers
4 Egg Whites
1 Whole egg
1 tsp Cinnamon
1 tsp Baking Powder
(If you want more of an almond flavor you could add almond extract. I did not use it in ours)
WHAT YOU DO:
Combine the whole egg, egg whites and cottage cheese into a medium mixing bowl. Whisk gently. Add the Cinnamon and Baking Powder to the egg. Place the Oatmeal (ground into flour) in the bowl and whisk it all together. Use a Small hand mixer for about a minute to make the batter more smooth so the pancakes will be more light and fluffy. I added about a TBSP of water to my batter to make it a tad more smooth. Pour 1/4 cup of batter into circles on a heated non stick pan. Add Small handfuls of blueberries and almonds to the pancakes and push into the batter gently. Once bubbles form, flip and cook the other side. Remove and let cool or the blueberries will burn your mouth. Serve with a drizzle of Pure Maple Syrup.
If you would like to add more protein to your pancake I recommend using SFH PURE protein. It is my FAV for a protein shake. I drink Shakeology for my daily superfood nutrition. If you do this, you will need to add a little more liquid. I recommend using 1/2 cup no sugar added apple sauce or almond milk.
