My kids favorite version of mac and cheese.
People ask me all the time how I get my kids to eat healthy. The real answer is that they eat what I make or they don’t eat. TRUE STORY. I have been this way since they were old enough to eat solid food. They learn quick that they don’t want to go to bed hungry. They drink a superfood shake in the mornings so I know they are getting the nutrients they need if they turn it away. It is hard to watch them go through the learning process but it is worth it to not be a short order cook and to teach my kids to eat. JUST MY OPINION and what works for me. I keep in mind what I know they just can’t tolerate and I see it in their faces when they eat it. And they always have to try. And RETRY every time I make it. There are few things they will not touch. I try to make the foods that I know they love and make it healthy. MAC AND CHEESE is a favorite and they LOVE it made this way.
*If your kids are deterred by the color green…Sneak in some cauliflower in place of the broccoli. Chop it fine and they will never know.
What you need:
4 oz. Quinoa Pasta, elbows
4 tsp Organic Grass-fed butter
(or extra virgin organic Coconut Oil)
2 tbsp All purpose Gluten Free flour (garbonzo bean flour or any whole wheat flour if you are not gluten free)
1 1/2c Unsweetened almond milk
2 c Fresh grated White Extra Sharp Cheddar Cheese
3 c Organic boneless skinless chicken breast, cooked & cubed
4 c Chopped broccoli florets, steamed
1 tsp Himalayan salt
Optional:
1/2 tsp Ground black pepper
1 scoop Shakeology Boost Power Greens
What You DO:
Cook the pasta according the the directions on the package.
Steam Broccoli in a medium pot with a 1/2 cup of water until tender.
Melt butter in a large saucepan over medium heat. Add Flour and cook until brown, about 1 minute whisking the whole time. Slowly whisk in almond milk and continue to whisk until thickened and there are no lumps. Reduce heat to low.
Optional: Add scoop of power greens and whisk until completely mixed in.
Add 1 1/4 cup of cheese and whisk for about 2-3 minutes until melted.
Add chicken, broccoli, and pasta to the pan; mix up until completely coated with cheese sauce.
Serve and enjoy!
