Dinner tonight!!! Butternut squash stew. So easy and so delicious!!!
What you Need:
1 tsp. olive oil
1 1/2 lbs. raw boneless lean beef stew meat, cubed
1 medium onion, chopped
1/2 green bell pepper, chopped
1/2 red bell pepper, chopped
4 cloves garlic, crushed or minced
2 medium tomatoes, chopped
1 cup low-sodium organic beef broth
1 bay leaf
1 tsp. himalayan salt
1 tsp. ground black pepper
2 cups butternut squash, cubed
1/4 cup fresh parsley, chopped
What to Do:
Heat oil in a large saucepan over medium heat. Add beef and cook 4-5 minutes or until browned. Add onion, peppers and garlic and cook for about a minute. Add tomatoes, broth, bay leaf, salt and pepper. Bring it to a boil and then reduce the heat to medium-low. Cover and cook for about 40 minutes. Add Squash and mix it all together. Cook for about 8-10 minutes or until the beef is fork tender. Remove bay leaf and top with parsley.
