Carob Reeses Cups

A friend of Mine Brandi Botts shared this recipe with me and a group of people learning to eat clean and it was just to good not to share so here is is. Don’t fall out of your chair! This is an awesome treat to help you with the sweets cravings. It is super easy to make and it is good for you too. Well…Don’t go eat the whole tray at once.

Secret is…It is not chocolate. It is Carob chips. You have heard me talk about Carob chips and powder before in other recipes so this is the same thing.

All you need for ONE cup is:

1 tbsp of carob powder

1 tbsp of melted coconut oil

1/2 packet of stevia or a couple liquid stevia drops

1 tsp of Peanut Butter or use 2-3 raw unsalted peanuts

THEN mix it all together and pour into a muffin foil and throw 3-4 raw almonds on top and let them sink in the bottom of the melted mixture. Put in the freezer for however long you want to harden up…doesn’t take long at all..if you want it to stay moist then only leave in there a couple minutes.

You can also add 1 tbsp of shredded coconut and 1/2 tbsp almond meal which is completely optional.  It makes it more of an Almond Joy instead of a peanut butter cup.

ENJOY!
