So this is one of those things that I kept seeing and thinking…There is NOOO way that is good. I have never really been a fan of cauliflower. I was WRONG. I went in not having high expectations for it. But it was worth a try. So glad I did. It was easy to make although a little time consuming to get the right consistency. My kids absolutely loved it and i ended up having to make a second pizza because they devoured it.
Pizza will be a more regular thing in our home from now on with this. I will just make multiple dough balls at once and freeze them for a healthy quick and easy meal option that the kids will love.

What You Need:
(Makes 1 Medium Crust)
4 cups raw cauliflower rice (about 1 head)
1/3 cup soft goat cheese (chevre)
1 egg, beaten
1 teaspoon dried oregan
pinch of salt
Homemade Sauce:
1 Small can of imported Italian Tomatoes
1/4 cup diced Onion
2 cloves fresh Garlic
Pinch of Oregano, Basil, Salt & Pepper
Toppings:
Mozzarella Cheese (I use the goat cheese Mozz. But low fat part skim will work too)
Fresh Basil (if you want a Margarita Pizza)
Any other topping you may want to add
What to Do:
Preheat your oven to 400 degrees.
Wash the Cauliflower Head. Cut of the cauliflower florettes and toss into a food processor. Discard the stalks/stems. Pulse the florrettes until it becomes like a rice.
Fill a medium pot with about an inch of water. Bring to a boil and then add the rice. Cover and let it cook for about 4-5 minutes. Drain into a fine mesh strainer.
……THE SECRET……
Place the strained rice into a clean thin dish towel. Wrap it up and Squeeze the towel removing all the excess water and moisture. You will be surprised at just how much extra liquid comes out.
*****WARNING*****
The Water will still be REALLY HOT and will Burn you so either rinse the rice with cool water first or use a rubber glove or pot holder to help squeeze the water out of the towel.
It will look and feel more dry and like a doughy consistency once it is all squeezed out.
Put the Rice in a Large Bowl and add the BEATEN Egg Cheese and Spices. Mix it all up. Mix it really well. It will not really feel like normal pizza dough but it will hold together. Press the Dough out onto a lined cookie sheet or pan. Line it with Parchment paper. This is MUST! Keep the dough about a 1/4 inch thick. Not to thin or it will not hold up well when you pick it up. Make the edges a little higher around the outside.
Pop it in the Oven and Bake for 35-40 minutes WITHOUT Toppings. The Crust will turn a golden brown and become more crispy. Remove from the oven and then add your sauce and whatever toppings you want. Let your kids add toppings too. Just be careful of the HOT pan.
Return the Pizza to the oven for about 5 -10 minutes until the cheese melts. Remove from the oven let it cool for a few minutes and you are DONE!!
