Clean Tortilla Soup

 

Well…It was Taco Tuesday and It was FREEZING out. All I really wanted was a soup for dinner and a warm fire to snuggle up next too.  It is rarely in the 30’s in Texas and with the wind chill it WAS! No Bueno.  So I went on a mission to make our Taco Tuesday into a Taco Soup of sorts.   This turned out amazing and made for GREAT LEFTOVERS for days after.  That is my kind of dinner.  I don’t like to have to think about lunch the next day and making extra for dinner each night helps to keep me on track when it comes to lunches and saves me time.  The kids LOVED this and asked for more.  If your little ones don’t like spicy…Maybe Omit the Cheyenne Pepper.  Or use 1/4 tsp instead of a half.  We LOVE SPICY in our house so I added a full tsp. I hope you enjoy it!

 

What you need:

 

2 tsp olive oil

1 cup onion, chopped

4 celery stalks, sliced

4 garlic cloves, minced

4 medium tomatoes, chopped

2 c water

4 c low-sodium organic chicken broth

3 cups rotisserie chicken, skinless, chopped or shredded

3 carrots, sliced

1 tsp dried oregano leaves

1 tsp chili powder

1 tsp garlic powder

1 tsp cumin

½ tsp cayenne pepper

½ tsp sea salt + more to taste

½ tsp pepper + more to taste

1 Sliced avocado

Fresh cilantro, chopped

Cotija cheese, crumbled

Optional:

Greek yogurt

Corn Tortilla chips

 

What to do: 

 

Heat oil in large pan. Add chopped onion and celery. Cook for about 5 minutes until veggies are soft. Add garlic and stir for about 1 minute. Add tomatoes and cook for 5 minutes until tomatoes are soft. Remove from heat and set aside.  Pour the veggie mixture and 2 cups of warm water  into a blender or food processor.  Blend until smooth.  Transfer the mixture back to the pan and add the chicken broth, chicken, carrots and spices. Bring to a boil.  Reduce heat to medium-low and cook for about 10 minutes.  Don’t forget to stir it every now and then.  We let ours sit for about 20 minutes to soften the carrots even more.  Dish it up and Top with preferred toppings.  I used avocado, cilantro & cheese, You can also use Greek yogurt and/or tortilla chips.
