Audrey and I decided to have a little fun and make up a family favorite in the kitchen, She LOVES to make and it is a great way for us to spend time together. We Love Pumpkin Bread and we wanted to try out a new cleaner version. It turned out pretty good. The kids loved it. We served it up with some vegan butter and honey. Delicious. We hop you enjoy it too.
What You Need:
1/3 c coconut oil
1/2 cup honey
2 eggs
1 cup Organic Pumpkin Puree
1/3 cup Oat Flour
1 tsp baking soda
1 tsp vanilla
1/2 tsp Cinnamon
3/4 tsp Pumpkin Pie Spice OR 1/4 tsp of Ginger, Nutmeg, Clove
1 tbsp Chia Seeds (ground, use a coffee grinder or a spice grinder)
What To Do:
Mix Oil, Honey, eggs, and Pumpkin together in a medium bowl. Then add oat flour, baking soda, vanilla, cinnamon and spices and mix well. Spray a loaf pan with coconut oil and pour in the batter.
***I added a mixture of organic turbinado sugar and cinnamon and swirled it on top.
Bake at 325 for 45-60 minutes.
