Clean Smothered Chicken

Looking for a something clean and easy to make for dinner tonight? Check out this clean smothered chicken recipe I cooked up last night:

1 lb boneless skinless chicken breast.
1 cup diced tomato
1/2 medium onion chopped
8 oz sliced baby bella mushrooms
2-3 cups organic baby spinach, washed
21 season salute seasoning
Garlic Powder
EVOO (extra virgin olive oil)
1/4 cup Parmesan cheese (sub with mozzarella or provolone)

Preheat oven to 350. Slice chicken breasts in half and season on both sides. Place in a glass baking pan and cook for 15 minutes. In a medium sauté pan, heat oil over medium heat. Add mushrooms, onion, garlic powder and cook for 3-5 minutes or until onion is translucent. Add tomatoes and spinach and cook for 2-3 minutes or until spinach starts to wilt. Remove from heat. Remove chicken from oven and top with the spinach mushroom mixture. Sprinkle Parmesan cheese over top and return to the oven for another 8-10 minutes. Remove from heat and enjoy.
