There are so many ways that you can make clean pancakes. I have been know to make clean chocolate chocolate chip pancakes which are my favorite but these are just as good. These are made with Coconut flour. You can use oat flour or almond flour to bake with but these I like with the coconut flour. Get Creative and choose the topping you want. You can add some blueberries to the batter if you like before you flip it over or some of the carob chips from the carob reeses cups. Just make smart choices like fresh fruit, local raw honey, agave, or grade B maple syrup. Check out the other recipes in this section for more pancake ideas.
What you need:
- 2 large eggs
- 2 tbsp. coconut flour
- 3 tbsp almond milk
- 1 teaspoon vanilla
- 1/2 teaspoon baking powder
- 1/8 teaspoon salt
- 1/8 teaspoon cinnamon
- 3 packets (1/2 tsp each) stevia
Instructions:
Combine all ingredients and stir until thoroughly combined. Heat a greased nonstick skillet over medium high heat for a minute or two. (You want the pan to be completely pre-heated so the first pancakes cooks correctly.) Pour desired amount of batter onto skillet, and cook until golden, a few minutes on each side. Transfer to a plate.
