Crustless Sausage & Mushroom Pizza

 

I was looking for something quick and easy that I could throw together for dinner.  My kids wanted to make a pizza but there just wasn’t enough time to get it all together and I really wanted to make something a bit healthier. Yes I could have made a healthy pizza but I just wasn’t in the mood. LOL.  So I started to think about what we had in the house that I could make that would taste like the pizza we make at home.  I used all the ingredients below to throw together this delicious “crustless” Sausage and Mushroom Pizza.   The kids loved it and my husband decided to make it again and actually put it on pizza. Hope you like it.

 

Chicken Sausage Quinoa

 

What you Need:

 

1 cup Quinoa, cooked

12 oz Portabella mushrooms (add more or less to desired taste)

1 lb Chicken Sausage,  cooked and sliced ( I used Adelis Parmesan, artichoke, & Basil)

1 14 oz jar of Organic no salt added Pizza sauce

Fresh Basil (to taste. I used about 2 Tbsp I think)

1 Red Bell Pepper

Parmesan Cheese (Or cheese of choice)

 

What to Do:

 

Cook the Sausage in a Sautee pan with a little water on the bottom.  Slice it after is it cooked through.  At the same time cook the Quinoa as directed on the package.

Add Mushrooms and Red Pepper to the Sausage with and add a little more water (very little) and cook for 3-5 minutes. When water is cooked down add in the Pizza Sauce and cook for 3-5 minutes until sauce is hot and simmering. Fold in the quinoa and add it to a bed of spinach or just serve as is.
