My FAVORITE pancake recipe. This is the easiest way to make pancakes. I honestly stumbled upon making them this way because I was out of options and I found an oatmeal packet, eggs and a banana in the pantry/fridge. Now I have tweaked and perfected it and I want to share. My kids love them and they taste great! Just because you are trying to eat healthy doesn’t mean you can’t enjoy foods you love. EASY Clean Pancakes
1/4 cup oats
3 eggs
1 banana
1 tbsp coconut oil (melted)
1 tsp cinnamon
1tsp vanilla
2 tbsp water (+\- for consistency)
Place oats & cinnamon in a food processor and blend until it is a fine flour consistency. Add in eggs, banana, oil, and vanilla and mix. Fold in favorite “extras” and cook 1/4 cup batter on a skillet. Top with grade b maple syrup or fruit
Makes about 4-6 pancakes
