This steak tip roast was super easy to make and my kids loved it too. We served it up with some butternut squash cooked with oil and cinnamon, sauteed’ spinach, mushrooms sauteed with onions and garlic. We took the 3 lbs sirloin and cut it in half allowing for shorter cooking time. With about 1 1/2 lb. slices of roast it was about 15 minutes in the preheat cook time and another 30 minutes in the oven on the lower temperature. We had the second 1/2 of the roast as left overs for lunch the next day.
Cook Time : 1 hr 20 minutes (or about 45 minutes if you cut in half)
You will need:
3 lbs beef sirloin tip roast, trimmed of all visible fat
4-6 cloves of Garlic peeled and halved
1 tbsp. Fresh Coarsely Ground Black Pepper
Grapeseed oil or cooking spray
(we have a mister and put our oils in that to make our own cooking spray)
Preheat the oven to 400 degrees.
Make slits all around the edges of the roast and insert the garlic into each slit. Sprinkle/rub entire roast with pepper. Spray the Roasting rack with the cooking spray and pace roast on the rack in a roasting pan.
Roast in preheated oven for about 20 minutes. Reduce heat to 325 and Continue cooking for about an hour until roast is at your desired level of doneness (Well done is about 170 degrees) Remove from oven and cover with foil. Let it stand for about 15 minutes. Slice thinly against the grain.
Tip: You can serve as an appetizer. Chill after slicing and serve with spicy mustard or horseradish sauce with toothpicks.
