1 Ripe medium banana (You can’t taste the banana)
1 tsp Baking powder
4 Egg whites
2 tbs Unsweetened almond milk (or milk of choice)
1 tbs Peanut butter/almond butter, melted in microwave for 30 seconds
1/2 tsp vanilla extract
1/2 cup Old fashioned oats (or gluten free oats)
1 scoop Chocolate Shakeology (substitute-1/4 cup Protein powder or oat flour. Oats ground into a flour in food processor)
1 tsp dark cocoa powder (optional if using the Shakeology or chocolate protein)
3-5 pkts Stevia (or 1 tbs baking stevia or 2 tbs sweetener of choice)
1/8 tsp Salt
1 tbs Mini dark chocolate chips (or regular size)
In a small bowl, mash the banana and mix with the rest of the wet ingredients.
In a separate bowl, mix together the dry ingredients (leave out chocolate chips). Combine the wet and dry ingredients until batter is smooth and well combined.
Pour batter for each pancake onto heated griddle or non-stick pan (batter makes about 6 pancakes total). Sprinkle a few chocolate chips on each pancake before flipping.
When pancakes bubble, flip and cook the other side is golden brown.
