Kale Veggie Soup

 

We have all been battling the stomach bug around here so we have been on a liquid diet over the past few days. We starting feeling better and wanted veggies and other options besides broth so we began making more hearty soups. This one was a hit! It was really good and good for you too.  Only 70 calories in each Cup, 13g of protein and 210 mg of potassium. Lots of vitamin A & C.  If you like hearty soups I recommend giving this one a try.

What you need:

1 bunch kale, stems removed and chopped

1 cup Red Kidney beans

1 cup diced red potatoes

1 cup diced white onion

14 oz diced red tomatoes

1 diced bell pepper ( color of choice)

1 chili pepper

1-2 cloves minced garlic

1 tbsp olive oil

4 cups water

a dash of Pink Salt & pepper

2 tbsp of tomato paste (or to taste).

1 1/2 tbsp Paprika (or to taste)

1 tbsp Italian Seasoning (or to taste)

 

(you could add carrots or other beans too if you would like)

 

What to do:

Heat oil in large pot over medium heat. Add Potatoes, peppers, onions, garlic, tomatoes and stir for 5-8 minutes.  Add tomato paste, spices, beans and 4 cups of water.  Stir and bring to to boil. Reduce heat, cover, and simmer for 5 minutes.  Add Kale, stir well, and simmer for 3-5 minutes. Add salt if desired.

 

Makes 6 cups.
