2 large lemons
1 garlic bunch
Fresh rosemary sprigs
1 lb of lean thick cut pork chops
Herbs of choice (I used thyme, and oregano)
Layer 1 lemon, Sliced, and garlic on the bottom of the pot. Add pork chops add herbs on top, layer on half lemon, sliced, on top of chops. Squeeze juice from other half of lemon into the pot. Add in 3 sprigs of Rosemary. Cover and cook on low for 1-2 hours. (FYI mine was a little tough and it was in for about 2 hours) Serve with baked asparagus and red potatoes or brown rice. You can put the potatoes and asparagus in the pot too if you wanted.
