Portobello Pizza

It’s PIZZA NIGHT!!!! We did pizza night early this week. Of Course I put a spin on it. Are you a mushroom fan? I am not. BUT Imade a Portobello Pizza Bake. It was really good and the kids didn’t seem to notice that it was a giant mushroom under the sauce and cheese. We paired it with some sautéed Spinach and Wild Mushroom and Garlic Couscous.

Using a grill pan, with oil, grill 2-4 Portobello mushroom caps, brushed with olive oil, until it is soft to the touch. It was about 6 minutes on each side. I removed the mushroom from the pan and put it in a baking dish and topped it with tomato sauce and shredded mozzarella cheese. Bake it at 350 until the cheese is bubbly. Then remove it from the oven and place it over the couscous and spinach. You can top it with red pepper flakes or other toppings if you want.
