Rosemary-Lemon Chicken with roasted broccoli and potatoes
4 oz chicken thigh (or choice of chicken)
1 cup broccoli florets
1 cup baby poatoes
1 tsp EVOO
1 tsp rosemary
Sauce
6 oz Non fat plain greek yogurt
1 garlic clove chopped
1 tsp rosemary
2 tsp lemon juice
zest of lemon
salt & pepper
In a bowl combine non-fat plain greek yogurt, garlic, rosemary, lemon juice, lemon zest, a dash of pink salt and pepper. Marinate chicken in the yogurt sauce, 20 minutes. While it is marinating toss potatoes and broccoli with olive oil and rosemaryand roast on 400 for about 20 minutes unti potatoes are tender, On a grill pan cook the chicken on either side about 6 minutes each and then top with remaining yogurt sauce and Serve.
