Simple Banana Nut Protein Pancakes

A healthy spin on breakfast. I am starting to put together a meal plan for the new lifting program that Val and I plan to start on the 4th with some of of friends and followers. I started digging through my old bikini competition cookbooks and recipes for ideas and came across these Banana Nut Protein Pancakes. They are just as delish as I remember. Yumm!!

 

Banana Nut Protein Pancakes

 

What You Need:

1 c old fashion gluten free oatmeal

1/2 cup ricotta or cottage cheese

1 mashed ripe banana

2 tbsp walnuts

4 egg whites

1 whole egg

1 tsp baking powder

 

 

What to Do:

 

Mix all ingredients together in a large mixing bowl.  Heat a Large skillet to 350 degrees and place 1/4 cup of the batter in a small circle on the Skillet to cook.  Once it is bubbling flip and let cook for about 2 minutes. Remove from heat and top with your favorite toppings.

 

****I used grade B organic maple syrup as well. Just a tbsp.
