Holy YUMMM!!! I have an obsession with tacos and I wanted comfort food for dinner. Since I am trying to be good and stick to fresh all natural ingredients, I put my own spin on a taco bake to create a SKINNY taco bake. I went into it saying…this will either be really good or an epic fail. We have chicken nuggets right”? Lol. Well…It was AMAZING. Like really good. And fresh tasting. I hope you enjoy it as much as we did.
What You Need:
1 pound lean Ground Turkey
12 oz Mild Salsa (Use a Medium or Hot for more Heat)
1 medium onion finely chopped
1 heaping tsp Cumin
1/4 tsp cayenne pepper
1 cup organic cheddar cheese
3-4 large Zucchini, Sliced Thin Long Ways
1 avocado, diced
1 large tomato, diced
What You Do:
Preheat Oven to 350
In a Large Skillet, Heat a tsp of oil over medium heat and brown the Ground Turkey meat. Once Turkey is cooked through, add onions, cumin, and cayenne pepper. Mix Together and then add the Salsa. Mix together and let simmer for 2 minutes.
Slice the Zucchini Into thin strips.
In a 9×13 casserole dish, layer the bottom of the pan with half the zucchini. Then pour in the Taco meat mixture. Layer the rest of the zucchini strips on top and cover with cheese. Cover with Aluminum foil and place in the oven for 30 minutes. Remove the foil and cook for another 5 minutes. Remove from oven and let cool. Cut into 1 cup portions and top with the tomatoes and avocado.
