This was by far the most easy way to make a clean and healthy spaghetti for the kids. I used the Spaghetti Squash, popped it in the Microwave for 5 minutes and then sliced it in half, scooped out the seeds, and removed the strings to make the “spaghetti”. Then I browned up some organic ground turkey with a little water and italian seasonings. I added in the Garlic, Onion, Chopped imported italian tomatoes, Basil, Oregano, and a little S & P. If you really don’t care about the sauce being homemade then RAO’s Sauce is a great organic from a jar option or MOM’s. Just read the ingredients. If it says anything that itsn’t an herb or from the ground then don’t use it.
What You Need:
1 Large Spaghetti Squash
1 lb Organic Lean Ground Turkey
1/2 medium Onion
2-4 cloves garlic, diced or minced (or to taste)
2 Large Organic BPA free cans of imported Italian Tomatoes
1 can Mom’s Organic Tomato Sauce
A pinch of the following herbs and spices
Fresh Basil
Oregano
Salt and Pepper
What to do:
Put a little EVOO in a sauce pan and heat over medium heat. Add in the Onions and saute until soft. Add in the Ground Turkey and Brown. Once it is completely cooked through, add in the Tomato sauce, crushed tomatoes with the juice and garlic. Bring it to a boil and then reduce the heat to a simmer. Add in the Basil, Oregano, Salt and Pepper and let it simmer stirring often.
Take the Spaghetti Squash and pierce it with a knife. Microwave it for about 5 minutes or until soft. Slice it in half lengthwise. Scoop out the seeds and discard or cook them as you would pumpkin seeds. Using an ice cream scooper or a fork remove the strings until only the skin remains. It will pull loose into little strands.
Place the Spaghetti Squash Strands in a bowl or in the skins and then top with the sauce.
