Wild Caught Tomato Garlic Pesto Salmon

Last night I was sitting around craving one of my favorite party dips. I had planned to make salmon for dinner and quickly had a thought. What if I could make the dip that I love but instead of using cream cheese, use Salmon. So I gave it a shot and may I just say WOW!!! I will be doing this again. Everyone in the family LOVED it. Here is what I did:

 

What you need:

1 1/4 lb. Wild Caught Salmon

1 small jar of pesto (or home made)

3-4 small Roma tomatoes, diced

2-3 cloves garlic, minced

1/4 cup shredded mozzarella cheese

pine nuts

Tin foil

 

What to do:

Pre heat oven to 400 degrees. Place the Salmon (skin on and down) on a piece of foil that you will turn into a pouch so make the piece of foil big.  Cover the salmon with the whole jar of pesto and the garlic then rub it in. Dice the tomatoes and spread evenly over top.  Sprinkle on the pine nuts and the shredded cheese. Close the Salmon into the pouch and place on a baking sheet or pan. Place in oven and bake for 20-25 minutes or until fish becomes flaky.

 

Serve with Seasoned Red potatoes and Asparagus.
