With the Ultimate reset from Beachbody I have learned to LOVE veggies and new ways to create some of my favorite dishes. I was not able to have protein or grains in the last week of the cleanse. Tuesday is Taco Tuesday in our house so I got a little creative. The recipe called for Garlic Veggies and a sweet potato. I improvised and added a few ingredients and spices. It was amazing and tasted like the veggie fajitas that I usually get at our favorite local mexican place.
What you need:
(Serves 1)
1 Zucchini sliced and then diced
1/2 medium onion diced
2 cloves fresh garlic
1/2 cup fresh Pico de Galo (Mild or Medium)
1/2 an avocado
1 tbsp EVOO
Cumin
Paprika
Salt and Pepper to taste
What to Do:
Place oil in a large skillet with Onion. Toss and cook until soft and yellow. Add in Garlic and Zucchini and toss. Let simmer for about 5 minutes. Add Spices and toss again. Simmer for another 2 minutes. Add in Pico De Galo and toss. Let simmer for 2-3 more minutes. Zucchini should be soft. The aroma will be filling the air. Remove from the heat. Cut and dice avocado and place on tip of Zucchini mixture. Plate and Enjoy!
